A new twist on a favorite recipe.
2 pounds halibut or mahi mahi
2 tbs greek seasoning blend
2 tsps olive oil divided
6 flour tortillas
1/4 cup Hummus
3/4 cup Mozzarella Cheese
1/4 cup feta
1/4 cup Cucumber diced
1/4 cup Tomato diced
1/4 cup Onion diced
1 Avocado diced
1/4 cup Tzatkiki
1 tsp dill weed fresh
Grill fish 6 to 7 minutes until firm and cooked through then cut into cubes.
Preheat oven to broil on high
Dice cucumber, tomato, onion, and avocado. Set aside.
In a small fry pan, add olive oil and turn to medium-high heat. Crisp the tortillas once oil is hot, by cooking 1 minute per side. Place them on a baking sheet
Add a dollop of hummus to the center of each tortilla
Top with olives, fish, and mozzarella cheese divided equally between the flour tortillas
Broil on high 2-3 minutes, until the cheese is melted and golden
Top with a dollop of tzatkiki, a sprinkle of feta and diced cucumber, tomato, onion, and avocado as desired.
Garnish with fresh dill for added color
